The Meal Plan My Daughter Requested Before She Left on Her Mission

Before my daughter left on her mission, she made one special request: “Mom, will you make all my favorite meals one last time?” And honestly… how do you say no to that? So I pulled out the recipes she grew up on- the cozy ones, the comfort ones, the ones she’d ask for over and over, and turned it into a full week of her dream meals. If you’re sending a missionary soon (or just want a week of tried-and-true family favorites), here’s the exact meal plan we used.

Salad Bar with Steak Bites

Salad Bar makes for such an easy dinner. We usually do lettuce, grape tomatoes, hard boiled eggs, avocado, croutons, and your favorite dressing. Then I add whatever meat I have. My daughter’s favorite are these steak bites!

 

Poppyseed Chicken

I’ve made this recipe for years, and it’s been good, but a little bland… until I found this recipe. It’s so good, easy, and quick! My whole family loves it! Here’s the recipe.

 

Yucatan Chicken

This is another super easy and quick recipe and all my kids love!

Recipe:

2 rotisserie chicken breasts, cut into chunks or shredded,
Sprinkle with:
2 Tbsp. lime juice
1 Tbsp. Mexican Seasoning or:
1/2 t. cornmeal
1/4 t. salt
1/4 t. oregano
1/2 t. paprika
1/4 t. cumin
1/4 t. cayenne pepper
Cook together in a large non-stick skillet.

Sauce:
1 pt. stewed tomatoes
1 small onion chopped
2 Tbsp. sugar
1 can chopped green chilis
1/4 t. garlic powder

Add sauce to chicken and cook on medium-low for 10 minute. Serve with tortilla chips. Top with shredded cheese, lettuce, sour cream, olives, tomatoes, etc.

 

Grilled Cheese and Tomato Soup

I don’t think I really need to give you a recipe, but what my daughter loves about these is that I just butter the outside of the bread, and use miracle whip on the inside. Nothing fancy, but they always make her so happy.

Slow Cooker Chicken Enchiladas

If you like white and red enchiladas, you’re in luck, because this is both. The combination and flavors are soooo good. I’ve never had anything else like it. It’s super easy too. You’re whole family will love it! Get the recipe right here!
