I decided to try something a little different with our family meals: cook everything for the week on Monday. The goal is that once Monday is over, I don’t have to think about dinner again for the rest of the week. No staring into the fridge at 5:00 p.m. wondering what on earth I’m going to make. No last-minute grocery runs. Just open the fridge, heat up dinner, and move on with my life. 😂
Mondays are also my missionary’s P-day, which means I spend a LOT of time talking to her. And since I’m going to be chatting away, I thought, why not make the most of that time? I can cook, chop, bake, and prep while we chat. It’s basically like having my daughter keep me company while I get a head start on the entire week.
I’m trying to choose meals that will hold up well in the fridge for several days and still taste good when they’re reheated. I’m definitely experimenting here, so we’ll see how this goes! But if I can make Monday my big cooking day and then barely have to cook the rest of the week, I think I might be onto something.

So far, I’m really loving the idea of doing the work once and getting to enjoy the payoff all week long. And honestly, if I can cook dinner while talking to my missionary? That’s a win-win in my book.
